Cook the macaroni according to package directions. Keep it pretty firm and rinse with cold water. Beat an egg in a small separate bowl. Add the butter to a pan and melt it. Then add the flour and cook for 2 mins while stirring constantly to keep from burning. Add the milk and mustard and then cheese. Quickly stir a little bit of the cheese mixture into the beaten egg until combined, then stir the egg mixture into the pot of cheese sauce until combined. Rinse the noodles and add the cheese to the noodles. Don't under salt.
