Suggest a better descriptionPreheat oven to 350 degrees. Butter a 2-quart baking dish.
Melt the butter in a saucepan over medium heat. Stir in the flour and cook 1 minute. Gradually whisk in the milk. Cook, stirring, until lightly thickened to the consistency of cream. Whisk in the Gorgonzola and Fontina cheeses. Cook, whisking, until cheeses are melted.
Combine the cheese sauce and the cooked ziti. Stir in the mozzarella and spoon in to the baking dish. Sprinkle with Parmesan.
Bake until bubbling and lightly browned, about 30-40 minutes.
Fontina cheese can be hard to find, but I have successfully substituted Gruyere and nobody noticed the difference.
