Melt the butter in a pan. Once the butter starts boiling, leave to boil for one minute until hazelnut brown in colour. Set aside and leave to cool a little.
Whisk the sugar, eggs, honey, milk and vanilla extract together.
Sift the flour and baking powder into the mixture and whisk.
Sift the butter into the mixture and mix well.
Leave the mixture overnight in the fridge.
Baking day:
Preheat the oven to 210 C.
If needed butter and flour the Madeleine molds and fill the mold 3/4 with a spoon.
Put the mold in the oven on a wire rack, the airflow will help creating "the hump".
Cook for 10-15 minutes.
Unmold immediately and let cool on a wire rack.
