In a small bowl, stir all basil butter ingredients together and set aside.
Lightly coat broiler pan with cooking spry.
Place mahimahi on the pan and sprinkle with the seasoning blend.
Cook 4 to 5 minutes on each side.
Meanwhile in a large skillet heat oil over med. heat. Add shallots, garlic saute 3 mins. Add tomatoes saute 2 mins.
Stir in wine, capers and vinegar.
Bring to boil.
Add the succhini ribbons, reduce the heat and simmer about 5 mins, stirring occasionally.
Stir in parsley. Set aside.
When the fish is done, plate with zucc ribbons tomatoes and skillet ingredients and garnish with a teaspoon or so of the basil butter.
