Indian recipe.
Heat oil in a large stock pot. Add onion and saute. Add garlic and saute another minute. Add Cumin, Curry, Red Pepper and Chicken chopped into bite sized pieces. Add salt and pepper to taste. Cook for about 5-7 minutes until the chicken is no longer translucent.
Add 3 cups of water and simmer for 1 hr on low. Remove lid, if you''d like it to thicken.
Serve over white rice.
