Pound chicken with a mallet until thin. Salt & pepper the chicken. Whisk together the egg and milk in a saucer. Place the bread crumbs in another saucer, then add salt and rosemary to the crumbs. Hand mix.
Make the alfredo sauce. See Recipe: ''Quick & Easy Alfredo sauce'' or ''Kimmy's Spaghetti sauce''.
Heat olive oil in a large skillet over medium-high heat. Dip the chicken breasts in the milk and egg mixture and then in bread crumbs and drop in the skillet. Fry chicken on both sides until golden brown and cooked through, about 4 min/side. Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Place a lid on the skillet until the cheese melts.
Make spaghetti according to package directions. Put 2 ounces of spaghetti on each persons plate. Top the spaghetti ? way with 2 pieces fried chicken topped with monzarella.
Ladle sauce on each piece of chicken. Sprinkle with Parmesan cheese.
Optional: Serve with garlic bread, a salad and a nice Chianti.
