Make your favorite taco in a corn tortilla...with beef, chicken, shrimp, etc. Just leave out the veggies (tomatoes, lettuce, guacamole) and dairy (cheese, sour cream) for now.
In a skillet, heat the oil on high. It should sizzle when a tiny piece of tortilla is dropped into it. Grasp the taco closed with tongs and lay it on it's side in the oil. Cook until golden brown, about 45 sec. Then flip the taco over and fry the other side. Remove the taco, let drip, then cover with a paper towel to drain thoroughly.
While it's still hot, add some cheese and your favorite toppings.
