Suggest a better descriptionThaw roast in refrigerator for at least 3 days before preparing. Preheat the oven to 400° F.
Place meat, fat side up, on rack in a shallow roasting pan. In a bowl, mix herbs, garlic, salt and olive oil. Rub herb mixture over roast. Place roast in the oven for 15 minutes at 400°F. Then lower temperature to 325°F, roasting until meat thermometer inserted into the center of the roast registers an internal temperature of 125° for medium rare, about 1 hour and 15 minutes. Remove from oven, cover with foil and allow to rest for 15 minutes.
