Cook the soaked beans on top of stove covered with water abt. 1 inch above beans.
Bring to boil and reduce heat to simmer about 1 hour.
Cook until a few beans on a spoon, when blown on, peel back their skin.
Place half of the beans in a bean pot or casserole dish.
Pour half of the sugar, salt mixture on top of these beans.
Add the remaining beans and then the remaining sugar salt mixture.
Cover the beans with hot water and bake 325' for 8 hours. Be sure to check every hour or so to
add hot water (I keep a pan on stove on low so it's ready when I need it) as needed to keep
water level above the beans.
Some people discard the bean water and use fresh water and heat it up on stove, some use the same water and just add more fresh water, warmed up as needed - your choice.
