It´s a typical food from Santa Cruz - Bolivia, very popular and with a lot of flavor.
First of all if you are making it with beef jerk you should wash it to take the extra salt that is on it.
After doing that put the meat in a sauce pan and let it boil until is pretty soft.
Take out the meat from the sauce pan (DO NOT THROW THE WATER) and hit it until it get like little
stripes.
The water where you boiled the meat you use it to cook the rice, add salt and more watter if necesary,
cook it on slow fire and take care that it not dries try not stearing it too much at this time.
In a fry pan put the meat to get a little bit of golden look.
In another saucepan put the oil and add the onion, sweet pepper, tomato and garlic and stir for a while,
then add the achiote, cook for 5 minuts.
Fry the eggs and bananas.
Add the meat to the rice and stir, dont let it dry. Then put the other mixture from the other sauce pan on
it and mix it pretty well, should take an yellow or orange color in the rice. Stir it strongly for 3 mintus and serve it.
Put the egg over the rice and banana on a side.
It goes better when you also add fried Mandiucca (Yuca) to it. Just slice it in a 2 inches by 1 inch and fry it. Tastes really good with this plate.
