Suggest a better descriptionHeat oven to 375F. Generously grease 6 or 8 large muffin cups. In large bowl, combine apple sauce, milk, lemon juice, raisins and bran; let stand 3 minutes. Stir in oil, honey, and vanilla until combined. Beat in eggs, one at a time. Stir in dry ingredients just until blended. Fill prepared muffin cups almost full. Bake at 375F for 25 to 28 minutes or until toothpick inserted in center comes out clean. Carefully loosen edges from cups; remove muffins to wire rack to cool. Yields 6 to 8 large muffins. VARIATIONS *Nutty Apple Muffins, substitute chopped nuts for raisins. *smaller Apple Muffins, use cupcake-paper lined medium muffin cups, filling 3/4 full. Bake at 375F for 18 to 20 minutes. Yields12 muffins. Notes: These high fiber treats may be made with either shreds, buds or morsels of bran cereal.
