Heat the milk, butter, and salt in a medium saucepan over medium heat, stirring frequently, until it just begins to steam, about 6-7 minutes. Remove from the heat and let cool until lukewarm.
In a small bowl, dissolve the yeast and 1 teaspoon sugar in the warm water. Make sure your water is between 110-120 degrees F. Let sit for 5-10 minutes.
In a large bowl, add the sugar, eggs and lemon zest, beat for 5 minute. Add the warm milk and beat again. for another 5 minutes. Resist the urge to use a stand mixer, This is the way grandma made it! Add the flour and the yeast to the large bowl, mix and knead very well for about 15 minutes. Cover the bowl with a heavy, dense cloth.
Mix the Sugar and Cinnamon in a bowl and set aside
Place the bowl in a warm, dry and draft free place. Let it rise until doubled in size, which should be anywhere from 2.5-3.5 hours.
Ideally this is where you bring out a deep fryer and set it to 350f, if you dont own one ,fill a Large Fry pan/skillet with 3 inches of oil and heat over medium heat until it reaches 350f (177°C) on a candy or instant-read thermometer.
Grease a working space and place medium sized balls of the dough (2-3 inches) on it. Stretch out each ball of dough and lay it in the oil, turning frequently, until golden brown on both sides. 1-2 minutes, depending on the size. Drain the Malassada on paper towel lined plate and then toss in the cinnamon sugar
