Butter and flour the inside of a large loaf pan (note: non-stick spray is not enough!). Cream together butter and sugar until fluffy; add eggs, sour cream, and vanilla. Add dry ingredients and mix just until moistened, then add mashed banana - stir until combined. Fold in pecans.
Optional: sprinkle chopped pecans on top. If you do this, you'll need to cover loosely with foil for the last 20 minutes or so to keep the nuts from burning.
Bake at 350 degrees for 1 hr. 10 minutes. Let cool in pan for 5-10 minutes, then loosen sides and remove from pan to cool on a rack.
