mix together -
1 1/2 c sugar
3 tablespoons cornstarch
2 heaping tablespoons cocoa
3 egg yolks (save whites for meringue)
1 1/2 c milk
cook all of this on the stove until thick, or microwave on high for 7 minutes, stirring every minute.
when it is thick, add -
1 teaspoon high-quality mexican vanilla
1 tablespoon butter
mix thoroughly, and pour into baked pie crust - have the meringue ready to go when the filling is done.
I have been experimenting recently with meringue, and have not found a "perfect" recipe that doesn't weep or shrink, but this is about the best I can get -
beat 4 egg whites until they're beginning to get thick add 1/2 teaspoon cream of tartar early in the blending once they begin to get thick, gradually add 1/2 cup of superfine sugar.
put the meringue on the pie while the pie is still very hot, then bake at 325 slowly, 20 - 30 minutes.
