Chicken curry
1. Place the curry powder in a non-stick pan on medium heat. Once powder warms up, add the lemon juice and mix into a paste.
2. Now add the chicken cubes and fry on low heat for about 2-3 minutes.
3. Add the mayonnaise and peaches and stir together. Allow to simmer for about 5 minutes.
4. Add the chutney, spinach and cream and cook for about 5 minuted. Season with salt and pepper.
5. Serve on a bed of basmati rice and garnish with crushed cashews.
