Eva is my sister-in-law's deceased Mother-in-Law. Her "Eva's cookies" are a huge hit at Christmas. Everyone wants the recipe!
1. Mix the flour, baking powder and salt. Add crushed cornflakes and almonds
2. Beat eggs and then slowly beat in sugar, and then oil, vanilla and almond extract.
3. Blend flower and liquid measure.
4. Line a cookie sheet with parchment paper.
5. Shape the batter into 4 rolls (about 2" wide), and place on cookie sheet, with enough room (about 3" apart) for dough to expand.
6. Bake at 350 degrees (pre-heated oven) for approx. 25 minutes.
7. Temporarily remove from oven. Cut each roll 'sideways' to make individual pieces, Return to oven and NOTE: bake for approx. 25 minutes at 300 degrees.
8. When crisp, golden brown and baked through, remove from oven, and cool. Try not to eat too many at once.
The crumbs and endpieces go very nicely with a vanilla ice cream!
