Shred the chicken
Cook the pappadums following directions on the packet
Combine mango, omion and chopped coriander and 1/3 of the lime juice in a bowl.
Season with salt & pepper
Combine cream cheese, mint, garlic and remaining lime juice in a small bowl.
Season with salt & pepper
Place pappadums on a serving platter And top with chicken, mango mixture, cream cheese and coriander sprigs to serve
