1. Boil the noodles, toss with 1 tablespoon oil
2. In a large bowl, combine remaining evoo, sesame oil, vinegar, lime, honey, s and p, and red pepper flakes. Whish to mix well. Add the noodles, green onions, carrots, mango and cilantro and toss.
3. Refrigerate the salad for 2 hours, stirring every half hour, so that the noodles absorb the dressing evenly. Serve cold with sesame seeds.
