Combine cooked white rice, milk, vanilla, and a pinch of salt in a saucepan and bring to a simmer over medium heat. Cook, stirring occasionally, until creamy, 6 - 8 min. Remove from the heat, stir in 3/4 cup white chocolate chips and let sit a few minutes. Spoon into bowls and top with chopped mango, warm dulce de leche and toasted coconut.
