Dice the onion, the chili and the mangos in little cubes.
Chop the cilantro. Divide the lemons and squeeze them out.
Mix mango, cilantro, onion and the lemon juice in a bowl and season with salt to taste.
Cut the tomatoes in about 5-7mm slices. If cheddar comes in piece, rub it.
Fry the soya-meat for about 4 minutes in a pan.
Take a knife and cut the tortilla wraps til the center.
Position ingredient on every quarter. On quarter with cheese, the next with mango ceviche, the other with soya-meat and the last one with tomatoes. Start folding the wrap, so every corner lands above de next one until you have a single piece with 4 levels filled with every ingredient.
Locate the folded wrap inside a sandwich maker or in a pan and let it heat up for about 2-3 minutes
