Tofu 1-2-3
Preheat oven to 350F.
Put the tofu in a large bowl and mash with a fork or potato masher. Add the parsley, salt, and pepper, mashing and stirring until evenly mixed. Make sure the spinach is completely drained of water and stir it into the tofu mixture. Set aside.
Cook the manicotti according to the package directions. Drain and gently rinse with cold water until cook enough to handle.
Pour a thin layer of spaghetti sauce in the bottom of a 9x13-inch baking dish and set aside. Using a small spoon or pastry bag, stuff the manicotti with the tofu filling and arrange in a single layer over the sauce. Spoon the remaining sauce over manicotti and sprinkle with Parmesan cheese. Cover and bake for 35 minutes or until bubbly. Uncover, bake for 5 minutes, then remove from heat and let stand for 5 minutes before serving.
