The Meat House
Everybody knows that meats are usually enjoyed in savory dishes with savory sides. But every once and a while, there comes an opportunity for meat to make its way into a sweeter kind of dish and bring that dish up to a level of deliciousness never thought possible by meat and dessert lovers alike. It’s a pleasant and unexpected surprise that delights the taste buds, but boggles the mind (and the eyes!). In this case, we’re talking about our Maple Bacon Pumpkin Pie.
Yes, we said it. Bacon…IN the pie. This recipe combines 4 seasonal fall ingredients; maple syrup, pork, pumpkin and cinnamon to create a unique and oh-so-comforting dessert that meat lovers and dessert connoisseurs can enjoy together, in blissful pie harmony.
- Place bacon in a cool pan and heat to medium-low to render the fat, 10 to 15 minutes. Cook bacon till crispy on both sides, 7 to 8 minutes per side. Once crispy reserve 2 Tbsp of fat and discard the rest. Let bacon cool.
- Once bacon is cool, dice into small pieces for a crumble topping. Put reserved fat back in the pan with the bacon and bring heat up to medium-low. Add brown sugar and cook till dissolved, stirring frequently, 3 to 6 minutes. Be careful not to overcook! Let cool.
- In a large bowl, whisk together the eggs, pumpkin, cream, maple syrup, cinnamon, ginger, nutmeg, salt and allspice. Mix in ½ of the crumbled bacon and pour pumpkin mixture into pie shell.
- Bake in preheated 425°F oven for 15 minutes. Reduce temperature to 350°F and bake for 40 to 50 minutes or until knife inserted near center comes out clean. Add crumbled bacon to top for last 10 minutes of baking. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving. Top with whipped cream before serving (not optional).
