Note from original author: Roasted apples & celery root (celeriac) with a maple-bacon glaze make a perfect fall side dish. If you can't fine pure maple syrup, use an equal amount of brown sugar, plus 1 tablespoon of water (in Step 5).
1. Preheat the oven to 450ºF.
2. Toss the celery root with the olive oil, pepper & salt. Spread the mixture on a rimmed baking sheet. Roast until it starts to brown; 10 to 12 minutes.
3. Add the apples to the baking sheet, tossing gently. Then, continue to roast until the apples & celery root are tender; 6 to 10 minutes more.
4. Meanwhile, cook the bacon in a medium skillet over medium heat, stirring occasionally, until the bacon is crispy. Remove the bacon to a paper-towel lined plate with a slotted spoon. Discard all but 2 teaspoons of the bacon fat.
5. To the same skillet, add the maple syrup & bring the mixture to a boil, scraping up the browned bits. Add the cooked bacon & thyme (or rosemary).
6. When the celery root & apples are tender, gently toss them with the maple-bacon glaze & roast them for about 5 minutes more.
