Suggest a better descriptionIn medium saucepan over medium heat combine 2 cups water, maple syrup, salt, vanilla, granulated onion, pepper, cinnamon and nutmeg.
Mix them well.
Bring to a simmer, stirring often.
Cook for 1 to 2 minutes until salt and syrup are dissolved.
Add ice water to large bowl.
Pour brine over ice water.
Mix well until everything is blended.
Refrigerate for at least 2 hours , until well chilled.
Place chops in large zip lock bag.
Pour brine over them.
Seal bag squeezing out all air.
Place in a pan or bowl to minimize leakage and refrigerate for 3-4 hours occasionally moving the chops around in the bag.
Prepare grill for medium heat.
Remove chops from brine and rinse off.
Dry chops well.
Place on grill for 5-6 minutes until golden brown.
Flip and cook for another 5-6 minutes until internal temp is 150 degrees.
Remove from grill and brush each chop with maple syrup.
