Preheat oven to 350. In 12 inch nonstick oven-safe skillet cook sausage.
Beat eggs with half-n-half. Whisk in ricotta and 1 cup mozzarella. Season to taste with salt and pepper. Set aside
Add peppers and onion to skillet with sausage and saute until soft. Reduce heat to low, pour egg mixture in and stir well.
Cook 5 minutes until eggs begin to set. Top with remaining mozzarella. Bake 10 minutes until lightly browned and eggs have set.
