Slice carrots into 1" thick slices. Place carrots, 1/4 cup water and remaining ingredients in a pot. Cover and cook until slightly tender.
Stir well, then remove lid and continue cooking and stirring occasionally, for 10 minutes or until water evaporates and mixture thickens.
