Suggest a better descriptionAdjust oven rack to top position. Preheat to 375°. Toss potatoes in a bowl with rosemary, oil, and salt & pepper to taste. Spread onto one side of a 9x13 baking dish. In a small bowl, combine mustard and maple syrup. Place chicken thighs on other side of baking dish. Salt and pepper thighs. Thickly coat tops of thighs with maple-mustard mix. Place in oven and cook for 30 minutes. Flip potatoes and baste chicken with more maple-mustard sauce. Return pan to oven and continue cooking till chicken is cooked through, about another 20-30 minutes.
If desired, after the first 30 minutes, add halved Brussels sprouts or broccoli florets (tossed in oil, salt, and pepper) to the same side as potatoes to add a green vegetable without any additional muss or fuss.
