This recipe uses only the highest quality ingredients and makes a very tasty and healthy cookie. The cookie is crisp and not too sweet.
Allow the butter to reach room temperature. In a large mixing bowl, beat the egg and add cinnamon, nutmeg, salt & vanilla. Add butter and sugar, cream until light and fluffy. Stir in oat mixture one cup at a time. Add raisins. Add maple syrup and work in. Cover with plastic wrap and let mixture stand in cool place overnight.
Preheat oven to 375°.
Measure out the flour, add baking soda and baking powder. With a sifter add to the butter/oats mixture. Work together until consistent texture is achieved. Fashion dough into small pancakes about ¼” thick with smooth texture, then divide the pancakes into cookie-sized pieces and place on ungreased baking pan.
Bake 11 minutes or until golden brown. Makes about three dozen.
