Suggest a better description1. Whizz up the carrot, celery sticks and onion in the food processor as a base
2. Pour some olive oil in a pan, heat it, and add the base with some salt and pepper
3. Let it sweat a little then add the smoked garlic
4. Give it two minutes then add the peppers
5. Stir, give it five, then add the butternut squash
6. Sweat it, then add the oregano, cumin and the smoked paprika and stir it in
7. Add the tomato puree and stir it in
8. Add the tomatoes, the beans and the veg stock and stir it all in
9. Bring to the boil, turn it down, cover and simmer for 40 mins
10. Serve with rice and sour cream
Add chillis, hot chilli powder or get the beans in chilli or hot spicy sauce for added heat.
