This recipe has the flavors of the popular tropical drink. I have even added a shot of tequila to the marinade. But for family meals I would avoid it. The rice wine adds the tart zing on alcohol. This dish can be made in an instant pot, or air fryer. Chicken thighs cooked in a slow cooker will be very tender and shred easily if you like to top it on rice, quinoa, or stir fried vegetables

1. Chop the garlic slightly with the garlic. This penetrates both flavors into the chicien
2. Mix remaining ingredients, except chicken and cilantro into a deep dish to marinade chicken
3. Place chicken into marinade make sure as much chicken in submerged into marinade.
4. Cover with plastic wrap and chill for 4 hours, or overnight. Flip chicken in marinade after 2 hours
Alternate Prep method
Mix all ingredients and pour into plastic bag the zips closed
Place chicken in marinade and chill. Flip the bag at least once in 4 hours or overnight
TO COOK CHICKEN
Use your favorite method. Instant pot, slow cooker, airflyer or in the oven
Pour off marinade. Pour it into a small pot and bring to boil.
Reduce for 5 minutes or until thick
For a regular oven bake a 375 for 20 minutes or until chicken reaches 165 degree F
Pour reduced marinade over finished chicken and garnish with cilantro
Prep this recipe the night before and then flip the chicken in the morning. The marinade adds a tart sweet glaze.
