Suggest a better description1. Preheat oven to 350ยบ. Line two standard cupcake tins with cupcake liners.
2. Make cupcakes: beat sugar and butter with a mixer on medium speed in a large mixing bowl until light and fluffy. Add eggs, one at a time, and mix until combined. Reduce speed to low and add lime juice and sour cream. (Mixture will look curdled).
3. In a separate bowl, combine both flours, baking soda, baking powder and salt. Slowly add dry ingredients to wet ingredients and mix on medium speed until smooth, about 1 minute.
4. Fill the cupcake liners 3/4's full. Bake 18-20 minutes, until a wooden pick inserted near the center comes out clean. Let cool 20 minutes.
5. Make icing:: Beat butter and tequila with a mixer 2 minutes on medium speed. Add salt and mix until blended. Slowly add confectioners' sugar and beat 1 minute on low speed. Gradually increase the speed to high and beat until fluffy, about 3 minutes.
6. Spread icing on top of each cupckae. Garnish with a sprinkle of grated lime peel and sea salt.
Makes 15 cupcakes.
