Suggest a better descriptionLine a large baking sheet with tin foil, and spray with non-stick spray.
Wash tomatoes and cut them into halves – cutting out any brown stem. Wash bell peppers, cut in half and discard seeds and ribs.
Place them cut side down on the baking sheet and bake at 350 degrees for about 30 minutes until the skins wrinkle and juice starts to come out of the tomatoes.
Place roasted vegetables, garlic, olive oil, pesto or basil, 1 tsp salt, and sugar into a blender.
Blend until creamy, and more salt if needed.
Can use right away, or allow to thicken after time to cool; tends to be better the next day.
