Combine butter, onion, cottage cheese, salt, eggs, broccoli and 1/2 of the cheddar cheese. Mix well. Stir in muffin mix, pour into greased 9x13 baking dish. Sprinkle with remaining cheddar cheese. Bake at 400 degrees for 20-25 minutes. Serve warm.
Substiture own simple cornbread recipe and eliminate additional salt if preferred. Can do as muffins.
