Grease pans
Dissolve gelatine in hot water, add sugar and boil for 3 minutes.
Cool and add 1 cup icing sugar
Beat with electric mixer until mixture is thick and holds its shape. (Can colour if desired)
Spoon the mixture into the greased cake trays.
Stand at room temperature (about 1 hour) until firm.
Slide marshmallows out of pan.
Biscuits:
Beat butter, sugar and egg and vanilla in small bowl with electric mixer until combined
Stir in flour
Roll dough between sheets of baking paper until 5mm thick: place on tray. Refrigerate 30 minutes
Preheat oven to 180°C
Line oven trays with baking paper
Cut 5.5cm rounds from dough.
Place rounds, about 2.5 cm apart on trays
Bake biscuits about 12 minutes
Cool on trays.
Top biscuits with marshmallow - can use chocolate on biscuit first if desired to help stick the marshmallow.
Place biscuits on wire rack over baking-paper-lined tray: pipe or drizzle with remaining chocolate if desired.
Stand at room temperature until set.
