Good homestyle cornbread
Preheat the oven to 400 degrees, and put a small bit of cooking oil in your seasoned cast iron skillet.
Mix the cornmeal, flour and sugar together in a bowl.
Add buttermilk until the mixture sits flat and isn't lumpy. This may or may not be 2 cups.
Add one egg. Mix it in until you don't see any yolk.
Take out the preheated skillet, and dump the oil into the batter - if it sizzles, its hot enough and ready to be put in the oven.
Stir the oil into the batter then pour the batter into the skillet.
Bake it at 400 for approximately 30 minutes, or until the top is a nice golden brown color. It takes my stove about 45 minutes, but my mom's stove 20. Just keep an eye on it!
To make it a little fluffier - add one spoonfull of mayonaise!
