Best yeast rolls ever.
Dissolve yeast in warm water. In a mixer, combine sugar and shortening. Add mashed potatoes, yeast mixture, salt, 2 c. flour and eggs and mix until blended. Gradually add remaining flour. Turn out onto floured board and knead. Place in oiled bowl in refrigerator overnight. Punch down when taken out of refrigerator, form into rolls and allow to rise 3 hours. Bake at 400F for 15 minutes.
