Maryland Style Pit Beef on my UDS Smoker
Beef Brine
Mix Beef Broth, Kosher Salt, Granulated sugar, Black Pepper, Garlic powder, Cayenne pepper in a small pot on the stove and heat until the salt/sugar have fully dissolved.
Take it off the stove and add cold water (i throw in some ice) to get the mix up to about a 1/2 gallon of liquid.
Once the brine is nice and cold place the roast in a large ziplock (or any bowl) and fill with the brine.
Let this sit in the refrigerator for 24 - 36 hours.
After sitting remove and discard the brine
Beef Injection
Mix Beef broth, onion powder, garlic powder, cayenne pepper and Worcestershire sauce together and stir well
Inject Roast with as much as you can get into it - approx. 2-2.5 cups went into my 5lbs
Pit Beef
Mix the dry rub ingredients together (salt, pepper, garlic powder and chili powder) and rub it in all over the roast. Allow to sit in the fridge for at least 30 minutes (or as much as overnight)
For this recipe I used my UDS (Ugly Drum Smoker) heated up to around 300 degrees and didn't add any smoke wood (any grill will work)
Put the meat in and used a Maverick ET-732 meat thermometer to keep tabs on the temp.
Flipped the roast once when it reached 90 degrees
Pulled it off right around 125 degrees
Immediately wrap the roast in foil and let it rest in a cooler for 60 minutes
Slice it up thin (preferably on a meat slicer but a sharp knife will work)
Make an incredible sandwich with meat, onion, and horseradish
This recipe may have strayed a little from normal Maryland Pitt Beef, but WOW is it good
I used a relatively inexpensive whole bottom tip roast (10lbs that I cut in half and saved)
Don’t skip the brine – it may take some time but it is REALLY worth it
Once on the UDS it was about 1/2 hour per pound of cook time
