This is one our family's very favorite recipes and a traditional part of our holiday meals. My husband gives it his highest acolade "Tastes like more!" It's very good as either a dinner salad or as dessert, and can be made several days in advance.
With an egg beater, beat egg yolks in a glass bowl. Beat in next 5 ingredients.
Microwave egg yolk mixture in 30 second intervals until the consistency of custard. Use a hand whip to stir mixture between cooking intervals. About 1 to 1.5 minutes cooking time. Place in refrigerator to cool, while preparing fruit.
Prepare 6 cups of fruit, washing, draining, and cutting to bite size pieces, place in a large bowl. Recipe is best using fresh fruit, but canned fruit can be substituted with good results. Any type of fruit can be used, based on taste and preference. Juicy, dark colored fruit (such as canned cherries) tend to turn the whip cream dressing red or purple. So when using this type of fruit, rinse and drain very well, fold these in at the very end, or simply place on top of salad.
Whip the cream with 1 or 2 tablespoons of sugar.
Stir mini marshmallows into fruit, then stir in cooled egg yolk mixture. Fold in whipped cream, and spoon into serving bowl. Decorate with slices of fruit and/or sprigs of mint.
Cover and chill over-night in refrigerator so flavors blend to smooth and fruity taste.
