Cut cauliflower into crowns, place in casserole dish with a small amount of water, cover and cook in microwave until soft.
Drain water and mash cauliflower until smooth.
Stir in olive oil, garlic, chives and cheese.
Optional: Baked at 350 F uncovered for 10 minutes.
