Suggest a better description1. Place the Parmesan cheese into TM bowl and grate for 10-15 seconds on speed 8. Set aside in a separate bowl.
2. Place milk, salt and chopped potatoes into TM bowl.
3. Cook for 20 minutes at 100?C on speed 1. Make sure potatoes are well cooked before mashing. They are well cooked when they start to fall apart. In the last stages of cooking, At 22minutes. they suddenly all fall apart. That''s probably the point to stop. Do not mash undercooked potatoes, as they will be very gluey. It''s best to cook them for 20 minutes and then keep going and watch them from the 20 minute point onwards to see when they fall apart.
4. Insert Butterfly. Add the butter and Parmesan cheese to taste. Mash for 20-30 seconds on speed 3-4. Keep the speed down if you want to have some texture left in the potatoes.
Serve the mashed potatoes on a platter; sprinkle a little extra Parmesan cheese or chopped parsley over the top to garnish.
General Tips
You can mash without the Butterfly if desired. To add Butterfly simply move potatoes to sides of bowl to insert securely. Red or Royal Blue potatoes work well in this recipe. Some potatoes have a high water content, so check before mashing. Depending on your preferred consistency, some liguid can be poured off before mashing potatoes.
For smaller quantities, simply reduce the amount of potatoes and the liquid proportionately. If reducing quantity, reduce cooking time by approximately 5 minutes.
Variation
Use half potatoes and half sweet potatoes.
For a dairy free option, leave out cheese and butter and use 200-250g water instead of milk. Add 20g Extra Virgin Olive Oil and mash.
Notes
I made this on 11OCT2012. Used 700g potatoes and 200ml milk. It was a little on the overcreamy side. Perhaps overcooked, perhaps needs a little less time? Also probably needs more ventilaiton to let the steam out. Used Desiree Red potatoes, I think.
Made this 02NOV2012. Used 170ml milk, 880g potato and cooked for 20 minutes. Only mashed for 25 seconds on L3 so as to get some texture left in the mixture.
Made on 15DEC2012. Used 200ml milk, 1000g Maris Piper potatoes and cooked for 17 minutes (not nearly long enough) and then another 3 minutes.
