Simply the best
1) Peel and cube potatoes, add to boiling water and cook till mushy, about 15 mins. Meanwhile, fry bacon, set aside.
2) Preheat oven to 350 degrees. Drain potatoes and transfer to kitchenaid mixer. Using whisk, set to setting 4 and add butter, cream cheese, sour cream, and seasonings. During this time it should become smooth.
3) Grease a 13x9 pan with butter and add potato mix. Top with cheese and bacon. Put in the oven about 35 mins or until cheese is melted.
Can add extra toppings like chives, and more seasonings like red pepper, but leave the base alone.
