Suggest a better description• Start the potatoes in a pot of cold water. Cook until fork tender, drain.
• Mash the potatoes with the ricer.
• In a small pot, melt the butter with the cream.
• Using a whisk, mix the hot cream into the potatoes. Whisk out any remaining lumps. Be cautious to not overmix. It will become gluey.
• Fold in the sour cream, salt and white pepper.
• Season to taste
• Cool on sheet tray
• Reserve for service
