Peel and slice potatoes. Put in pot and just add enough water to cover potatoes. Bring water to a boil, turn to low, cover with lid and simmer for 15 minutes or until potatoes are soft. Drain potatoes, save 1/4 of the potato water to use when mashing potatoes. Add butter, half and half cream, salt and use potato masher. If potatoes are too stiff add a little of the potato water ( about a tablespoon at a time) until you have a good consistency of mashed potatoes. Serve immediately.
