Real maple syrup enhances the flavor of mashed sweet potatoes
Source: Inspired by a Blue Apron recipe
Fill a large saucepan with water and salt and bring to a boil.
Add the sweet potato and cook for 14 to 16 minutes until tender when pierced with a fork.
While the sweet potato cooks, make the maple butter.
Melt the butter in a small saucepan over low heat .
Add the maple syrup, vinegar and water and stir to blend. Salt and pepper to taste.
Remove from heat and keep covered.
Drain the potatoes and return to saucepan. and drizzle a small amount of olive oil over the top.
Mash with a fork to your preferred consistency.
Salt and Pepper to taste.
Serve the mashed potatoes with a generous amount of maple butter spooned over the top.
