In a medium bowl, whisk together maple syrup, vinegar, mustard, salt and pepper; slowly add Olive Oil and continue whisking to blend. Whisk in shallots. Set Aside
For Pears & Onions: Toss Sliced pears and onions with 1 tbsp olive oil and place on parchment lined baking sheet. Put in 400F oven and roast for 10 minutes, turn over and continue for 10 more minutes until golden and soft.
Toast Walnuts in oven with pears or in a dry pan just until fragrant and beginning to brown.
Salad: 4 Mason jars - pint size
Place 2 tablespoons Vinaigrette in the bottom of each pint mason jar. Add 1/4 of the pear slices and 1/4 of the onions slices. Next add a layer of toasted walnuts , then crumbled blue cheese and finish with the arugula .
When ready to serve, shake the jar thoroughly and either eat straight from the jar or pour into a bowl.
