The name of this curry paste must have come from the Musalman (the Indian word for Muslim) traders who landed on Thai shores. It is very similar to Yellow Curry Paste, only the spices are roasted before being ground and galangal is added into the paste. When mussaman curries are cooked, bay leaves are thrown in for extra aroma.
This paste is enough for two dishes of pork, beef, chicken, prawns, squid, fish, crabs, lobsters, or hard-boiled eggs, each serving about four people. Leftover paste is best labeled and frozen for later use.
Soak the chillies in 5 tablespoons hot water for 1-2 hours. (You could also put them in a microwave oven for 2-3 minutes and then let them sit for 20-30 minutes.)
Put the peppercorns, cumin seeds, coriander seeds, and cinnamon in a small, cast-iron frying pan and set over a medium heat. Stir the spices around until they emit a roasted aroma and turn a shade darker. Empty them into a bowl and allow them to cool. Then grind them as finely as possible in a clean coffee grinder or spice grinder.
Put the chillies, their soaking liquid, and the ground spices in a blender together with all the remaining ingredients, in the order listed. Blend, pushing down with a rubber spatula as many times as necessary, until you have a smooth paste.
What you do not use immediately should be refrigerated or frozen.
