1. Heat oven to 350F / 180C.
2. Coat 3x 23cm / 9inch cake tins sides with butter and flour to stop sticking. Place baking paper on base.
3. Mix flour, sugar, cocoa, baking soda, baking powder and salt til combined.
4. Add eggs, buttermilk, coffee, oil and vanilla. Mix on med speed on stand mixer.
5. Bake 30 - 35 minutes, insert a wooden chopstick in intervals until it comes out clean.
6. Cool for at least 20 minutes.
Frosting
1. In stand mixing bowl, beat butter and cream cheese until fluffy.
2. Add cocoa powder and vanilla extract. Mix.
3. Use mesh strainer to remove clumps from icing sugar.
4. With mixer on medium speed, add half a cup at a time. Wipe sides of bowl down to mix all ingredients.
