Matzo Ball Soup w/ chicken and vegetables
Start warming up the chicken broth, dice up onion, cut celery into halves and then mince. Celery stalks must be cut up finely. if you have celery leaves chop those up and add. Chop up 2 carrots into quarters and chop finely and add to broth. Let simmer while you work on everything else.
Make your Matzo balls (instructions on box). Aadd a bit of onion power and a touch of garlic powder. After it's mixed use 2 tablespoons of cooled broth and mix into the batter. Let sit in fridge for 10 minutes.
Now check the broth. If it needs more taste add anywhere up to 2 teaspoons of chicken base. Add a little onion powder.
Break chicken up into bite sized pieces (use hands rather than a knife for texture). cover in bowl to keep in moisture.
Check Matzo mix after 10 minutes. mixture will be a little stiff, add another tablespoon of the broth (cooled) and mix in. Add more if need be but when the mix starts to get soft you'll need to stop and put back in fridge for another 10 minutes.
Matzo mix should now be a bit "sticky". Bring broth back up to broil and then reduce heat to simmer.
Rolling Matzo balls: wet hands with COLD water. take an acorn size amount of matzo and form into ball, you do not have to roll. when they are slick drop into soup. Make sure they stay separated. Cook in simmering broth covered for about 20 min, stirring every 5 minutes.
Once done take pot off heat and put chicken in. let sit 1-2 minutes and it's now ready to serve.
