1. Soak your beans overnight. (I like to start with boiling water)
2. Put the beans, water, and ham shank in the pressure cooker.
3. Cook for 45 minutes.
4. Now add the chopped onion, garlic, and salt and pepper and simmer for an additional 20 minutes with the lid off. (regular pot)
5. Best if it sits overnight in the frig to meld the flavors!
