Give these light and delicious muffins a chance. They are quick and easy. I don't like Mayo, at all. An elderly woman made them for our lunch, and I had to be polite and try them. I fell in love with them, they are wonderful. Very tasty with butter and jam, or just dipped in gravy. You'll love them, and so will your family.
Heat oven to 450
Add all ingredients in bowl and mix
Spray muffin pan with a non-stick spray
pour mixture into prepared muffin pan
bake about 15 minutes until golden brown
IMPORTANT: keep and eye on them, as soon as the top is golden brown, take them out. Oven temp's can vary, there-by making the cooking time vary a little also!
I don't suggest using paper baking cups, these muffins are so light they will tear into pieces when the paper is pulled off them.
